Hump day is hitting us hard. But to those of you who are attempting veganuary, going vegetarian for January (veggieanuary?) or just feeling a bit hungry and not too sure what to cook… well… good news. We are coming in HOT with a recipe that will make you feel like you’re being super healthy whilst also being delicious. Oh, and it is completely vegan (in case that wasn’t clear).
Here we have it… Future Farm Larb Lettuce Cups using Future Mince:

NB. To make toasted rice powder, toast a large handful of uncooked sticky or jasmine rice over a low heat until it turns deeply golden brown. Grind in a pestle and mortar or blender.

Serves 6 – 8
Total time – 30 minutes

Ingredients
2 tablespoons sunflower oil
2 x 250 g packets of future farm mince
4 garlic cloves, roughly chopped
4 tablespoons vegan fish sauce
4 tablespoons lime juice
1 teaspoon sugar
1/2 teaspoon chilli flakes, plus extra to serve
1 stick of lemongrass, trimmed and finely sliced
2 shallots, finely sliced
4 kaffir lime leaves, finely shredded
2 tablespoons toasted rice powder
A handful of mint leaves
A handful of coriander leaves
4 little gem lettuces

For the tamarind dipping sauce
2 tablespoons vegan fish sauce
3 tablespoons lime juice
1 tablespoon tamarind paste
1/2 shallot, finely diced
1 red chilli, finely diced
1/2 teaspoon sugar
1 tablespoon coriander, finely chopped

To serve
Sticky Rice
1 cucumber, sliced
Lime wedges

Method
Heat the oil in a wok until hot. Add the mince and garlic and stir-fry until golden and crispy.
Take off the heat and stir through the fish sauce, lime juice, chilli powder, lemon grass, shallots, kaffir lime leaves and rice flour.
Shred half of the herbs and stir through.
Serve in lettuce leaves with the remaining herbs and dipping sauce.
Arrange on a platter with sticky rice, extra chilli flakes, cucumber and lime wedges.

Welcome to the #tunaverse where tuna, as you know and love, is exactly the same… the only difference? no fishing, no fish… just 100% plants. And now you can make the official Future Tvna Melt:

Serves 2
Total time : 15 minutes

Ingredients
1 tablespoon olive oil
2 red onions, sliced
1 tablespoon sugar
1 packet of future farm Tvna
2 tablespoons vegan mayo
A small handful of chives, finely chopped (optional)
1 teaspoon white wine vinegar
4 slices of bread
2 tablespoons vegan butter
1 jalapeno, finely sliced
Salt and freshly ground black pepper

Method
In a medium sized frying pan, heat the oil on a low heat. Add the onions and cook for 10-15 minutes until softened and beginning to caramelise. Add the sugar and cook for a further 5 minutes until sticky, dark and soft. Set aside.
In a bowl, mix the Tvna with the vegan mayo, chives and vinegar. Season generously with pepper. Set aside.
Butter the bread then add to a dry frying pan until golden and toasted on one side. Flip over and add a cheese slice to each piece of bread and continue to cook until melted.
Assemble the tuna melt by sandwiching the tuna mayo mixture with caramelised onions and sliced jalapeños between two slices of cheesy toast.

Fun fact about all of our products. We don’t use any Genetically Modified Organisms. You might read this and think ‘meh… why does this matter?’ well, GMO based products actually have a negative impact on the environment. Since they were introduced, the use of toxic herbicides has increased 15 fold. These herbicides can affect our pollinators, our soil and our water systems. So it is ALWAYS worth checking the label when you buy a product or just buy Future Farm and you know you're safe…
